    I am the wife of a very talented musician who takes me around the world in pursuit of excellence. Mama to Jakob, Audrey and Ella, who just happens to have Down Syndrome.
    And an aspiring disciple of Jesus, defender of the oppressed, writer, graphic designer and photographer.

    I write and speak on navigating through the fog of life…you know, when things don’t go exactly as planned and am fuelled by a passion to amplify the voices of those on the margins…

Foodie Friday: Really Good Granola

Hey Everyone,

Happy foodie friday! Okay, I’ll admit it – we are granola crunchers. Yup, we love the stuff, so I thought I would share with you our not-so-top-secret granola recipe so that you too, can be hippie wannabes.

Really Good Granola

What you will need:

4 cups of Oats
1/2 cup of sunflower seeds
1/2 cup of pumpkin seeds
1/4 cup of flax
1/2 cup of wheat bran
1/4 cup of coconut
1 cup of almonds (however you prefer: could be whole, I used sliced)
2 Tbsp coconut oil
1/2 cup of maple syrup
2 Tbsp of honey
1/4 tsp cinnamon

Method:

Preheat your oven to 250 degrees and line a baking sheet (with an raised edge) with parchment

In a small sauce pan, mix maple syrup, honey, coconut oil and cinnamon
Whilst that becomes an ooey-gooey mess, mix the oats, seeds, flax, bran, coconut and almonds together in a large bowl. Then add the ooey-gooey mess to the dry ingredients and toss well. Spread on your baking sheet and cook for about an hour and 20 minutes, giving the pan a little stir every 15 minutes for a lovely even colour.

After that, it is up to you! If you fancy dried fruit go ahead and add if after the granola has cooled. Eat it straight from the jar or serve it up with yogurt and fresh fruit.
