    I am the wife of a very talented musician who takes me around the world in pursuit of excellence. Mama to Jakob, Audrey and Ella, who just happens to have Down Syndrome.
    And an aspiring disciple of Jesus, defender of the oppressed, writer, graphic designer and photographer.

    I write and speak on navigating through the fog of life…you know, when things don’t go exactly as planned and am fuelled by a passion to amplify the voices of those on the margins…

Breakfast 101: Not your mama’s porridge

Are you one of those people that grew up with flavourless mush for breakfast? Well, it’s time to revolution that morning mush.

Here’s what you’ll need:

These proportions make for our family of 2 big people and 3 little people.

1.5 cups of oats (we use organic steel cut, but any old oat will do)
2 Tbsps of flax seeds
1/4 cup of wheat bran
3 cups of water depending on the oat you are using.

Bring to boil and let it simmer for 3-8 minutes depending on the type of oat.
We will often also grate in an apple, add cinnamon and/or raisins and chopped walnuts – really, the world is your pantry cupboard.

But here is the clincher – might I suggest not dumping 4 spoonfuls of sugar on your porridge just to give it flavour. You don’t need to. The grains give it lots of texture and flavour. Instead, I like to pour on about a 1/4 cup of apple sauce (could be homemade or store bought) and then drizzle it with milk (I use unsweetened almond milk because my tummy doesn’t like the real stuff)
